		<description>If you&#039;re going to use &quot;proper chicken broth&quot; instead of the water from boiling the chicken, there&#039;s really no reason you need to boil the chicken at all. You can dice it and brown it in the saucepan with a little butter, then remove it, cook the veggies, and add it back in at the proper time.

		<description>Why not poach the chicken instead of boiling it? Or is that what Chef ended up doing anyway? ie. bring it to the boil, turn off the heat and let stand in the water until the water is cold.  Gives a nice broth, and the chicken cooks super tenderly.</description>
