Ingredients
1 roll pre-prepared polenta, chilled in refrigerator
olive oil, or something like it
1 tomato, sliced
1 cup tomato sauce
1/2 cup frozen corn
handful of basil
salt and pepper to taste
grated cheese (who knows what I used?)
Directions
Layer as such:
Grated cheese, on top of
Coursely chopped basil, on top of
Smattering of frozen corn, on top of
Tablespoon of tomato sauce, on top of
Slice of tomato, on top of
1/2 inch thick slice of polenta
Salt and pepper to taste. Put polenta cakes in greased glass baking dish and drizzle in olive oil. Bake at 400 degrees for 25 minutes. Savor the deliciousness.
